PRINCIPLE

Volatile acidity consists on acids from acetic series, present in wine in free state or in salt form. 80% of volatile acids are collected through direct distillation of 10/11 of the initial volume, then titrated with a standard solution of sodium hydroxide using phenolphthalein as pH indicator
